Character encodings on MacOS

Character encodings on MacOS X turn me crazy. When I open a text file created on Linux (PPC) with any app that shows text, all accents are turned into crap. I've just find a solution for the Terminal: Débuter en Java sur Mac: "Personnellement je règle les Préférences de l'application Terminal en optant, dans la rubrique Shell, pour le codage des chaînes en MacOS Roman. Je peux ainsi voir les caractères accentués et le symbole de l'euro en Java". What about other apps??
